Control-Alt and the + / - keys on the number pad used to cycle through available display resolutions in X11 and I believe still does.

I would try that.

My grub lets me, under Advanced options for Ubuntu, select earlier Linux kernels in either regular or recovery mode. But with every one I've tried, still the same problem--just seeing what seems to be the center of the screen only.
