Ubuntu has been doing a bit of work in the tablet arena:

I looked at Ubuntu and ArchLinux for my HP TouchPad, but ended up
settling with CyanogenMod and Andriod ICS, primarily for it's use as
an e-reader and light weight communications.

You will likely end up going with a custom open source ROM, requiring
a varying degree of complexity with setup and stability. It's too bad
these content viewing devices are getting more and more locked down.
